Easy and quick pie recipe. It may be simple, but the taste is awesome! This recipe is from "Family Circle", Woman's Day", or "Woman's World" magazine, 2005.
- 2 1⁄2 cups low-fat milk
- 2 (1 1/2 ounce) packages sugar-free instant chocolate pudding mix
- 1 teaspoon vanilla extract
- 1 (1/4 ounce) envelope unflavored gelatin
- 1 (12 ounce) container fat-free whipped topping
- 1 (6 ounce) package reduced fat graham cracker crust
- At medium speed beat 2 ¼ cups milk, pudding mix and vanilla until thick. Let stand 5 minutes.
- At high speed beat until smooth and shiny. Pour remaining milk into bowl; sprinkle with gelatin. Let stand 5 minutes.
- Microwave on HIGH in 10-second intervals, stirring often, until dissolved.
- At low speed beat gelatin mixture into pudding.
- Fold in 2 cups whipped topping; spoon into crust.
- Spread with remaining topping; refrigerate 4 hours.
Sorry, but this didn't do it for us. The recipe is not easy to understand. The unflavored gelatin diluted the chocolate flavor, so I don't understand why the extra milk is necessary. It did not set up well (even with the gelatin), so I froze it, but it didn't thaw well. The filling did not all fit into the pie, so I had extra for dessert cups, which were loose, but good fresh.
An adventure but the end results were worth it. DD was visiting w/ the grandbabies and, while the little one was napping, she attempted to make this recipe. DD hasn't used unflavored gelatin before and was confused by the directions.... ending up with the reserved milk and gelatin in the bowl with the pudding. We scraped the gelatin off the pudding and put the pudding in a dish to have for later. Since I did not have any more chocolate pudding mix, I used two banana cream mixes and followed the directions, using experience to deal w/ the gelatin addition. ("Pour remaining milk..." should include "into ANOTHER bowl"... it would also help if it was another step.) I used fat-free half-and-half for half the milk and skim milk for the other half. I sliced bananas into the bottom of the pie shell before adding the pudding. I had to mound the banana cream into pie shell. No room for whipped topping but that can be added when serving. Next time... and there will be a next time... I'll use two pie shells, put a layer of bananas in each, add some of the banana cream, another layer of bananas and the rest of the banana cream. I think that way you'd still have room for the whipped topping on the top of the pie. DD, SIL, and granddaughters loved the cream pie and the gelatin makes it cut-and-hold-together very well. This was a wonderful dessert! I love the extra boost of unflavored gelatin to help the pie set up. I used a homemade crust. Of course the family loved every bite of this! Roxygirl
