I am eating this right now and it is so good and yummy and crispy. I used small green apples and left the skin on. I also used digestives like another reviewer as I had no wafers plus threw in some sultanas. Excellent recipe, many thanks.
After seeing Lalaloula's photo for this recipe, I knew I had to make it.So, on 11/08/11 I did. :). Other than cutting the recipe in half,this recipe was made as it was written.For some reason it didn't crisp up, but we did like the " extra something " that the vanilla wafers gave this. This is a very nice, easy to make and yummy apple crisp recipe. I scaled it down to 2 cups apple in total and for that I used only 1/2 tbs sugar in total as my fruit was very sweet and ripe. I didnt have any vanilla wafers, so I subbed digestives, which worked out nicely. I found that for my oven the temp was a bit too high as some of the topping browned a bit too much. Other than that, though a true keeper. THANK YOU SO MUCH for sharing it here with us, Crafty! :)

We loved this with the addition of a big ole scoop of Vanilla ice cream. Loved the variation using the vanilla wafers. Will certainly make again! Thanks Crafty!
