Nili's Tomato Barley Soup

- 3 -4 large onions
- 100 g tomato paste
- 800 g crushed tomatoes
- 2 bay leaves
- 3 -4 garlic cloves
- olive oil
- salt and pepper
- 1600 -2400 g water
- 1 cup barley
- 1⁄2 cup rolled oats
directions
- Finely chop onions.
- Sautee onions in a bit of olive oil until brown.
- Add in bay leaves, garlic, crushed tomatoes, tomato paste, barely, rolled oats and water (just fill up the crushed tomato can with water 2-3 times and add to soup now and/or during cooking). Stir while bringing all to a boil.
- Cover (or not! :) ) and turn down the heat to simmer for about 40 min or until the barely is soft and chewy and fully cooked.
- Garnish with fresh lemon time, basil, grated cheese, croutons or anyway you like and serve hot, warm or even cold.
- Enjoy!
