Nif's Lightened Spinach and Artichoke Dip

Yum!!! If you like this kind of dip, you will like the light version of it. Sauteing the garlic and artichokes first adds a really nice flavour. You can eat this cold or heated in the microwave of oven. Enjoy!

  1. Heat the oil in a small skillet over medium heat and sauté garlic for 1 minute. Add artichokes and cook for 3 minutes, stirring frequently.
  2. Meanwhile in a food processor, add spinach, Parmesan, cream cheese, mayonnaise, cheddar, and hot sauce if using. Add garlic and artichoke mixture.
  3. Process all until thoroughly combined but still chunky. Scrape mixture into a serving bowl and serve.
  4. Options: Microwave dip on high for 2 minutes, until bubbling or heat in baking dish in oven for about 30 minutes at 350°F.
