I cut this recipe in half for just the 2 of us, & that worked great, with enough left over for my other half to take to work & for me to have a small snack the next day, too! Used sliced ham; that's what I had on hand and skipped the green onion. It was still very good. Yes, I did use the baking powder and was surprised at the results! This was made in a cast iron pan and it worked out perfect. Thank you for posting.
This was great. The only change I made was to use green onions instead of regular. I love the use of the egg whites for a lighter taste and fat content.
Made for Potluck Tag. Excellent dish and very easy. The only thing that I did forget to do was to add the baking soda! - go figure. I will definitely make this again and next time I'll add the baking soda. Can't wait to have the leftovers for breakfast. Thanks for posting this Nif ~ it's a keeper!
