    Directions:

      Preheat oven to 350°.
    2. 2
      Bake potatoes for about 1 hour, until cooked.
    3. 3
      Cut each potato in half, and scoop centers into a large saucepan. Reserve potato skins for another use, if desired.

      Blend in remaining ingredients. Heat through, stirring gently.

      We really enjoyed these tasty spuds Chocolatl. I made them exactly as written, using all the listed ingredients. Loved the texture and flavor of the potatoes prepared this way.       I really enjoyed the baked potatoes here and I do believe that little tip will stick around, it really made a difference in the texture. I subbed some lightly cooked red pepper for the ask for tomato and for me that worked very well. The flavor is very good and I like the added bit of veg. :D

      These potatoes are wonderful! They have such a yummy, roasty flavour! Mmmm, very rich and very special! I thought they might need more seasoning, but they were great just with salt and pepper. I used cream cheese instead of cream as I was out of the latter. It still turned out yummy, creamy and decadent. I had organic potatoes, so did not bother to remove the peel.
      All in all a true keeper! Thank you so much for sharing it here with us, Chocolatl! Made and reviewed for Everyday is a Holiday Tag Game February 2011.
