  1. Heat oil in skillet over medium heat. Add peppers and onions and saute for 2-3 minutes until onions are pale golden color. Add to a large bowl with orzo, carrots and dried cranberries. Drizzle in the olive oil and vinegar dressing. Add salt and pepper to taste. Refrigerate for a few hours before serving.
