New York Style Cheesecake

ingredients

• 40 ounces pakages cream cheese
• 3 tablespoons flour
• 2 teaspoons grated lemon peel
• 5 eggs, lightly beaten
• 2 egg yolks, lightly beaten
• 1 3⁄4 sugar
• 1⁄4 vanilla
• 1⁄2 grated orange peel
• 1 pint sour cream
• 2 tablespoons sugar
• 1 teaspoon vanilla

directions

1. Soften cream cheese and combine with first 6 ingredients. Add eggs last, and mix well but DO NOT over mix.
2. Pour into greased springform pan.
3. Run rounded knife through the top to release bubbles.
4. Place in water bath in oven preheated to 300*.
5. Bake 60 minutes.
6. Remove and pour on topping -- made with last three ingredients.
7. Return to oven until topping is lightly browned.
