• 4 cups canned black-eyed peas, drained
 • 12 onion, chopped
 • 1 garlic clove, chopped
 • 1 (4 ounce) can green chilies (Hatch, or other brand)

directions

 • Put 3.5 cups of the peas in a blender or food processor with onion, garlic, chilies and jalapeño, and blend.
 • Heat butter and cheddar pieces over slow heat until both are melted. (If they don't blend together well after melting, that's okay).
 • Add the butter/cheddar mixture to the pea mixture, and stir or process until blended.
 • Add the remaining whole peas, and chill.
 • Serve slightly warm with your favorite chips.

 1. Great little recipe, even my father who normally will only eat a traditional refried bean dip seemed impressed. A couple changes though...I only used half the amount of butter which seemed to be more than enough, and I sauteed the onions and garlic for a bit before adding the cheese to melt. I also added some chunky salsa at the end because it tasted like it needed some extra acidity to go with salty tortilla chips.

 2. Yet another one of those 'hot' recipes that I probably changed too much, but I just couldn't bring myself to include the jalapeno, & I was chided by guests about that when they saw a copy of the recipe! Still, I thought this was a great dip! [Tagged, made & reviewed for one of my adoptees in the current Pick-A-Chef]

I love to cook for myself, my neighbors and family--even my dogs and cats. I like quick recipes for weekdays, and save the more complicated things for weekends. I also love to bake, although I don't have much of a sweet tooth. I have chickens in my backyard, so I'm always looking for ways to use up all those organic blue and brown eggs. I'm always up for anything hot and spicy and I love nearly all cuisines, especially Vietnamese and Italian. Houston is known for being overrun with excellent restaurants. Lucky me!

These days, I'm mostly eating raw vegan.
