This is may favorite when I go home to R.I.! Simple and oh so good!
- 4 hot dog buns (New England style center slit)
- 2 cups precooked lobster meat (chopped and chilled)
- 1 dash lemon juice
- 2 tablespoons mayonnaise
- 1⁄8 cup chopped onion
- 1⁄2 cup celery (diced)
- In a medium bowl, mix the lobster, lemon juice mayonnaise, onion and celery.
- Cover and chill until ready to use.
- Fill the rolls (toasted or un-toasted) with the lobster mixture.
