This was easy to make, and tasted good, but I wasn't sure if it was a salad or a main course. I chose to make it a meat course, and didn't use the greens. I would use Swiss cheese next time, because it has more flavor and melts better than mozzarella.

  1. Spray a nonstick skillet with cooking spray and heat over med-med high heat.
  2. Add chicken and cook for 6 minutes.
  3. Turn and cook another 6 minutes or until no longer pink.
  4. Stir in broth, vinegar, and pepper and let cook for a minute.
  5. Remove skillet from heat and top each with a ham slice, then a cheese slice.
  6. Cover and let cheese melt, about 3 minutes.
  7. Serve with your favorite salad greens or baby spinach.
  8. The sauce makes a light dressing.
