I felt like the sauce was a little bit runny, and lacking flavor. It was salty. I ended up adding some crushed red pepper and some honey to the sauce. I liked the fried noodles, though!
Note to reduce the amount of salt, use a low sodium soy sauce or Braggs liquid Aminos [this is a very very low sodium soy sauce]
I really wanted to love this recipe. The tofu was just too salty from the soy sauce, almost to the point of being inedible. The veggies and noodles tasted okay. I marinated for four hours and braised for one hour. The presentation was lovely but the flavor...not so much.
Very good although time-consuming--this is one of the best tofu recipes I've had in a long time. The celery amount wasn't listed so I used two stalks, which seemed about right. Tofu seems to take on a different (and so much better) flavor when it's marinated and cooked in the oven as specified in this recipe (I cooked it in the oven 30 minutes but next time I will increase it to at least 45 minutes) and the fried noodles are so much better than the ones we usually just boil.
