  • Fish:

  • Preheat a deep -fryer to 375 degrees F.
  • Mix the cornmeal, paprika and cayenne in a large bowl. In a separate bowl, add the buttermilk and the hot sauce.
  • Season the catfish with salt and pepper. Dredge in the buttermilk and then the cornmeal and spice mixture.
  • Drop carefully in the hot oil. Fry for 4 minutes until crisp. Remove to a paper towel lined sheet tray. Season with salt and pepper.
  • Sauce:

  • Mix all the ingredients in a small bowl. Serve with the catfish.

  1. OMG, AND OMG Again! Can I please have more than 5 stars??? Only thing I did different on this was let the fish marinate all day in buttermilk/egg mixture, but followed everything else. I saw them cook this on their show and we had a bunch of fish DH and brother in law caught a few months back, black bass was what I used, but oh my it is just as good as catfish. In Texas we have a lot of bass, so either one is devine in this mixture. Soooo simple too.
