  1. Toss nectarines with sugar and flour.
  2. Place in 13 x 9 x 2 inch baking dish coated with non-stick cooking spray.
  3. Beat together egg and egg yolk; whisk into cream.
  4. Pour mixture over nectarines.
  5. Bake in preheated 425 degree oven for 10 minutes.
  6. Reduce oven temperature to 350 degrees and bake for 35 to 40 minutes.
  7. Remove from oven and cool.
  8. Serve warm or at room temperature.
  9. Garnish with fresh mint.
  10. Peaches can be substituted for nectarines (peach skin should be removed).

I have a difficult time not giving a recipe 5 stars, I tend to avoid rating them if that's how I feel. But since 1Steve hasn't tried it yet, I should say this: My favorite fruit is the nectarine. But I have found, after trying several recipes this summer, (that I have also not rated,) if you love the unique flavor of nectarines, enjoy them in a fresh smoothie or just plain raw. Anytime they are cooked, in my opinion, they loose all flavor and taste like peaches, only blander. I do love being part of Recipezaar, and I hope I didn't hurt any feelings here. Just being honest.
