Nectarine and Cucumber Salsa

"I love nectarines more than peaches, so I came up with this salsa recipe for a summer party. Of course, use peaches if you have them instead!"

• Serves: 4

ingredients

• 3 nectarines, pitted & diced
• 1 medium size cucumber, peeled, seeded and diced (English is fine)
• 1 shallot, diced
• 2 scallions, thinly sliced
• 59.14 ml fresh parsley, minced
• 59.14 ml fresh cilantro, minced
• 29.58 ml apricot preserves
• 29.58 ml lime juice, plus more to taste
• 2.46 ml cumin
• salt

directions

1. Mix together first 6 ingredients.
2. In a separate small prep bowl, mix apricot preserves, lime juice and cumin.
3. Add to salsa mixture.
4. Salt to taste.
5. Enjoy!
