Great "fried rice" and really good with the egg on top!
- 1 lb pork loin, diced
- 1 large onion, diced
- 1 teaspoon mustard powder
- 1⁄2 teaspoon curry powder
- 2 tablespoons soy sauce
- 2 cups rice, cooked, cold
- Boil rice ahead of time, and cool.
- Brown pork and onion. Add condiments.
- Combine everything and top with celery leaves and/or shrimp on top.
- Top each serving with a fried egg (optional).
