Very good recipe that I got from a close family friend.
- 1 1⁄2 lbs ground chuck
- 24 ounces salsa
- 10 flour tortillas
- 8 ounces ricotta cheese
- 2 eggs
- 10 ounces grated monterey jack cheese
- Cook and drain meat; add salsa and simmer 10 minutes. Beat eggs and stir in ricotta cheese. Layer in 13 inch baking dish as follows: 1/2 the tortillas, 1/2 the ricotta mix, 1/2 the grated cheese, 1/2 the meat. Repeat layers.
- Bake at 350 degrees for 20 to 30 minutes.
This was VERY easy to make and VERY good! The meat mixture was so good that I considered eating it without making the dish! My picky kids loved it too! I will be making this one OFTEN! Thanks for sharing!
