Nana's Mincemeat

ingredients
- 3 lbs beef (stew meat)
- 1 - 1 1⁄2 lb suet
- 5 lbs tart apples, peeled and cored
- 2 (16 ounce) packages raisins, seeded
- 1 (16 ounce) package currants
- 1 pint molasses
- 1 pint cider or 1 pint apple juice
- 2 lbs brown sugar
- 1⁄4 lb citron
- 2 teaspoons cloves
- 4 teaspoons cinnamon
- 3 teaspoons mace
- 1 teaspoon black pepper
- 3 lemons, rind and juice
directions
- Cook the beef in 2 tablespoons salt until tender (as for pot roast), about 2 1/2 - 3 hours. Cool; put meat through meat grinder.
- Put apples through meat grinder then lemon.
- Remove rind membrane first and then put the rind through the very fine chopper.
- Cook all ingredients, except that the mincemeat does not scorch.
- Bottle for preserves. So delicious!

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
