- 1⁄2 cup old fashioned oats
- 1 cup water
- 1 tablespoon ground flax seeds
- 1 teaspoon ground cinnamon
- 1⁄2 teaspoon ground nutmeg
- 1 teaspoon imitation banana extract
- 1 (1 g) packet Splenda sugar substitute
directions
- Combine oats, flaxseed, and water and cook for 3 1/2 - 5 minutes, depending on the thickness of oatmeal that you like. Then add the remaining ingredients, stir, and enjoy! Sometimes I like to add more water even after cooking my oatmeal so it's kind of like a porridge.

I'm always looking for ways to add flax to our diets. I used bananas instead of extract and added walnuts on top. I felt like there was way too much cinnamon and nutmeg. Next time I will add them while cooking to help them mix better. I also let the water boil before adding the oats so it would be chunky instead of creamy because we like it that way.

This was a lovely breakfast. I did expand a bit using the name as inspiration. Instead of banana extract I used 1/2 of a small banana and added some chopped pecans. The fat content of of a banana is essentially none. A medium banana has .4 grams of fat, of which .1 is saturated. As to the pecans, almost all nuts are extremely high in fat, and pecans are no different. Pecans do have a very low amount of saturated fat relative to monounsaturated fat though. Deriving a portion of your daily fats from nuts such as pecans is likely a smart choice. Of course you just can't go wrong with cinnamon and nutmeg. I just mixed everything and microwaved for 1 min 30 secs. Using 1/4 cup of oats the additional bulk came from the banana.
