This is so good and so simple! I also didn't know what to do with the little cut-outs, so I ate them while I was preparing the recipe! This is a really easy and simple recipe for just about any time. Ok, I have to admit I was a bit skeptical about having crushed tortillas on my eggs, but the recipe turned out great. I did cut it in half to make just one serving. I used a homemade hot tomato salsa that I found at the grocery and used Mexican cheddar pepper jack cheese. I am a cheese lover, so next time I will add a bit more cheese. I think this would be good with a dollop of sour cream to top it off. The only thing the recipe did not tell me was what to do with the "cut out" after I had toasted it while cooking the egg. I just placed it on top of everything, like a little hat. Hopefully my pictures will be approved and you will be able to see the final creation.
