  • 18 large pepperoni slices
  • 14 cup ultra- low-carb marinara sauce (Transforming Recipes Cookbook, page 169 or any low carb sauce)
  • 14 cup cheddar cheese (shredded)
  • 2 tablespoons jalapenos (diced)
  • 2 tablespoons black olives (sliced)

  • Set oven to broil.
  • Line baking sheet with aluminum foil.
  • Place two paper towels on a microwave-safe plate.
  • Arrange pepperoni sliced in a single layer on plate. Cover with another paper towel.
  • Microwave on high for 1 minute. Remove from microwave. Push down on chips, soaking up excess grease.
  • When pepperoni slices are crisp, arrange in a single layer on baking sheet.
  • Spoon a small dollop of Marinara sauce on top of pepperoni slices.
  • Sprinkle cheese on top of sauce.
  • Place under broiler for 1-2 minutes or until cheese begins to melt.
  • Remove from oven.
  • Evenly distribute diced jalapeno on top of cheese.
  • Place one black olive on top of jalapenos.
