My Really Good Beef Roast (Crock Pot)

"I don't think I've ever made crock pot roast the same twice but this one was really good so I decided I would post it so I could remember it next time. Few ingredients for an easy supper. Makes an excellent au jus or gravy."

  • Rinse roast under cool water.
  • Add roast to crock pot.
  • Sprinkle brown gravy mix on and around roast.
  • Add 1/2 cup water around roast.
  • Add quartered potatoes around roast.
  • Sprinkle ranch mix over roast and potatoes.
  • Season potatoes with salt.
  • Set crock pot on high for 3 hours.
  • Cut carrots same size as quartered potatoes or if using baby carrots, use whole. Add carrots and additional 1/2 cup water if you like a thinner gravy or au jus.
  • Change setting to low for 2 more hours.
  • Slice roast on serving platter, surround with veggies.
  • Serve gravy or au jus on the side.
  • *Any cut of roast would probably work, but this is a good, lean cut that doesn't require trimming and also slices nicely. A larger roast may also be used.
  • *Cooking: You can also add the carrots after step 7 and cook on low for 6-8 hours total. The carrots will just be a little softer than the other method.

  1. One of tastiest, most tender roasts we've ever had-- a true keeper. Did add some celery and a bit of red wine after the three hours on high and think in future will include some onion as well-- just a matter of personal tastes. Thanks for sharing this wonderful recipe.

I made this recipe on 10/25/11 for mine and my SO's dinner, and most importantly the 2011 Fall PAC event.Except for adding the carrots at Step 7, the recipe was made as it was written.Since I added the carrots early, the meal was cooked for 7 hours on low.I wasn't able to slice the roast, it completely feel apart :). The seasonings from the ranch dressing and the gravy mix combined with the roast juices and water made a very good Au jus dip.My SO said that anytime I wanted to make this would be alright with him.And take it from me, that's a big compliment.   3. Made this yesterday and it was really good. The ranch dressing mix gave it a really unique taste. Only thing I changed was the use of regular salt instead of kosher salt and I added a little extra water in order to cover the potatoes and carrots. But when done, removed veggies and roast and added a little cornstarch to thicken gravy. Turned out excellent. This is a keeper!
     
  4. Perfect recipe!! Finally, a roast recipe with clear enough directions on how to make the veggies! I seem to be vegetably challenged when it comes to roasts, with them either being mushy or too hard. But these were perfect! I used the 3 hours on high/2 hours on low directions and it was right on! All hubby kept saying as he was eating this was "Yum yum"...which translates to 5 stars! Thanks for sharing...I have a feeling we will be using this recipe a LOT!!
     
  5. BRAVO! My family and I LOVED this roast. I made it exactly as the recipe said, but used fresh carrots instead of baby carrots. YUM! I'll never make roast any other way again.
