My Own French Onion Soup

ingredients
- 946.36 ml onions, thinly sliced (I use yellow)
- 44.37 ml margarine (I use Promise butter spread) or 44.37 ml butter (I use Promise butter spread)
- 396.89 g can beef broth
- 297.66 g can beef consomme
- 709.77 ml water
- 4.92 ml beef base or 4.92 ml bouillon
- 4.92 ml Worcestershire sauce
- 0.25 ml pepper
- 113.39 g swiss cheese, shredded
- 59.14 ml parmesan cheese, grated
- 6 slice French bread, toasted
directions
- In 5 quart dutch oven, saute` onions in butter over low heat 15 minutes or until onions are golden brown and tender.
- Stir in beef broth,beef consomme`, beef base, Worcestershire sauce and pepper.
- Bring to a boil. Reduce heat; cover and simmer 20 to 20 minutes.
- In a medium bowl combine cheeses.
- Ladle soup into 6 ovenproof bowls.Top each with slice of toasted French bread; sprinkle with about 2 Tablespoons cheese mixture.
- Broil about 3 to 5 inches from heat for 1 to 3 minutes or until cheese is bubbly. (Put bowls on cookie sheet to make it easy).
- Add additional leftover cheese if desired.

Made it as first course for Easter dinner. Very yummy! I loved the addition of beef consume as it gave it a nice beefy taste. I did add a couple of fresh thyme sprigs, bay leaf, and a touch of garlic to punch it up a bit, but that is my own personal taste and not a reflection of the original recipe. We all enjoyed this lovely soup. Thank you smartblonde #2 for sharing. Made it for Spring PAC 2014

<p><span style=color: #993366;>I live in the country near a small town</span>. <span style=color: #993366;>My husband is the love of my life. He's a good sport with my recipe experiments. Most of the time he likes what I make. I can always tell 'cause if he doesn't like it he won't go for seconds which he almost always does.</span></p>
<p><span style=color: #993366;>I have 2 stepsons that are all grown up. One is in college & the other is in the Army. I'm very proud of both of them. I love to bake but don't do it much anymore since there's only 2 of us.</span></p>
<p><span style=color: #993366;>I'm trying to cook a little more healthy. That can really be a challenge. I love the recipes on this site. So many ideas! The one thing I really don't like to do though is use low or no fat stuff. Most of it is just yucky!!<br /></span></p>
