My Mum's Apple Tart... Divine !

ingredients
- 1 tablespoon butter
- 1 cup sugar
- 2 beaten eggs
- 1 teaspoon vanilla extract or 1 teaspoon spice essence
- 1⁄2 teaspoon salt
- 1 1⁄2 cups self raising flour
- 1⁄2 teaspoon baking powder
- 1⁄2 cup milk
- 1 cup tinned apples (1 x 450g tin) or 1 cup cooking apple (peeled, cored & roughly chopped)

1 SAUCE
- 1 cup sugar
- 1 cup milk
- 125 g butter
directions
- (firstly i've suggested TWO cooking apples as an alternative but this publishing system has trouble decoding the measurement so i'm printing it here).
- cream butter, sugar, eggs & vanilla.
- add flour & milk.
- arrange apples on raw mixture.
- bake @ 180ºC for 30 - 45min (check with toothpick).
- SAUCE.
- boil slowly for 20min.
- pour over hot cake.
- pop back in oven.
- (you could halve sugar in future - after trying - if you don't like it as sweet).
