My Mom’s Amazing Parsley Potatoes
"My mom has the amazing ability to turn the mundane into something awesome. Never fail, one of my 5 brothers or sisters would ask for this every night. Simple, Tasty, Attractive and goes with just about anything. You can adjust the amounts to your liking as potatoes come in all sizes. Southern all the way!"

ingredients
- 5 medium potatoes (White or Red)
- 118.29 ml sour cream
- 29.57-59.14 ml fresh parsley (Adjust to your liking)
- 44.37 ml butter
- 4.92 ml garlic powder
- 2.46 ml salt
directions
- Peel Potatoes (do not peel if using Red Potatoes) and cut into chunks.
- Boil Potatoes until tender.
- Drain and Stir in remaining ingredients (If using Red Potatoes mash about 3/4 Cup of them before mixing).

I liked these, but I thought that they had a little too much sour cream. I will try about 1/3 cup next time so that the flavor of the potatoes comes out more. Otherwise, we really liked these and will be making them again. -
I made this for St. Patrick's day 2010 and it was a hit. No left overs. I will make this again soon. Thank you for sharing NcMysteryShopper! -
These were pretty good, but next time, I think I will reduce the seasonings and maybe add a little milk to make them softer and more moist. Thanks! -

Recipe was good, however, instead of garlic powder, next time I will use roasted garlic. I wasn't too fond of the dry garlic after taste. -
I remembered your photo of these potatoes and decided to make these. Unfort. I didn't have sour cream but I used plain yogurt instead. These were really good! I must admit that I don't usually use fresh parsley that much but they added a nice bite to the flavor and I loved the color. Give my thanks to your Mom, NcMysteryShopper. Roxygirl -
Fluffy creamy and great tasting mash. I made a few minor changes. I used fresh garlic,labnah instead of sour cream and I was quite liberal with the parsley. Today I made recipe#147288 with the left overs.I am sure I would be making this recipe often we get huge bunches of parsley over here that often gets trashed and labnah is an every day staple. I live in the beautiful mountains of Western North Carolina on Butler Mountain. I am a mystery shopper for restaurants and retail establishments. I graduated from UNC-Asheville with a BFA in art (photography).
I was just recently married in Costa Rica to KC and his 6 year old son, Ty. Our wedding was perfect and I will cherish the memories forever. Leslie, Mama's Kitchen, sassafrasnanc, Mommy Diva and Chef V attended the wedding with their husbands!! Leslie's daughter Sarah was our flower girl and her hubby Wayne was our talented musician! I had the time of my life!!!

Our family is rounded out with 6 Bengals, 1 Jack Russell Terror named Harley, a ferret named Mason, giant gold fish, a water dragon named Crusoe, a Beautiful Appaloosa/Arabian named Sassy, a stunning Palomino Quarter Horse named Sweet Pea and a gorgeous black Standardbred named Domino! We also have added a Leopard Appaloosa rescue horse to the mix. Her name is Pebbles and she is lovely!

I love Zaar! I have so many wonderful friends here and I really enjoy being a Forum Host. I love the games in the Contest & Events Forum! The games are addictive and a great opportunity to meet the members of this community. I had a blast co-hosting the first Zaar World Tour 2005 with ~Leslie~. Zaar World Tour II doubled in size and ~Leslie~ and I were joined with co-hosts Mama�s Kitchen and kzbhansen. Zaar World Tour 3 doubled again in size and Leslie, Mama's Kitchen and I were joined with SusieD, PanNan and JustCallMeToni! We also established the "Whine and Cheese Gang" which was a wonderful team that was put together to help all the teams playing. Zaar World Tour IV will be bigger and even better!!!

I try to cook using only organic ingredients and fresh organic produce. Of course this is not always possible... but I do make the effort.
I love experimenting with new cuisines and love fusion! I like most foods and most cuisines... Spices and Sauces are my forte! I am most known for cooking with all kinds of wine and liquor. I am always on the hunt for the perfect blend of flavors.... the dish whose first bite makes you put your fork down and relish the mouthful.
