My Grilled Caramel Sandwich

Yes, that's what I said, a caramel sandwich. My mom used to make this (pre-diabetes) for me and I still love them, just have to be very careful when I eat one. They are a VERY special occasion. You will be surprised at the outcome, though. It is an UBER easy dessert to serve and very quick.

  1. NOTE: You will probably want to start the assembly process while your skillet heats up.
  2. In a small bowl, combine the softened butter and brown sugar until combined well. Spread and pack down the mixture in between the slices of bread.
  3. Heat the skillet over med-high heat and add butter. Fry the sandwich until brown and the caramel has turned gooey. You will need to be VERY careful when flipping this sandwich, as it is not a "sticky" filling and could come apart very easily, But if you're careful and cook it long enough, the brown sugar and butter will turn into a caramel.
  4. Remove from the skillet and cut into fourths. Serve with a scoop of vanilla ice cream.

My dear Amy above, I know you would want Mommie to be totally honest if you were here. This sandwich is way too sweet and I am one that has a great big sweet tooth. I admit that I didn't have it with ice cream and maybe that would help. I am rating this as to warn others that this is way sweet. Still love you girl! Always- Remembering and Missing Amy!!!
