My Granny's Banana Cake

This was my great-grandmother's specialty. I found it in one of her old cookbooks.

  1. CAKE.
  2. in large bowl, cream sugar, shortening and eggs until light and fluffy.
  3. stir in remaining ingredients as listed.
  4. pour into greased and floured 13x9 pan.
  5. bake 15 minuted at 400, then 20 minutes at 350.
  6. cake will remain moist.
  7. while cake is cooking, blend all ingredients for icing (except vanilla) in small saucepan.
  8. ICING.
  9. bring all ingredients to a boil, stirring constantly.
  10. when mixture reaches full rolling boil, boil for one minute.
  11. let cool.
  12. add vanilla.
  13. beat and spread on warm cake.

This is an absolutely wonderful cake!I had to sample a piece, and as it was still pretty warm i was sure it wasnt at its best yet. But it was wonderful. Very moist very flavorful, just right. Very unique in that it uses a brown sugar frosting instead of the more common cream cheese type. Five stars for this. I love the heirloom recipes---:)--PeggyLynn

My dh was in flavor heaven. He really enjoyed the flavor and texture of this moist, dense, banana cake. The brown sugar icing was a nice touch, although it did make the cake extra sweet. Thanks for sharing your recipe.

We loved this cake! What a great cake and the caramel type frosting was out of this world. A nice change from the usual cream cheese fosting on most banana items. Glad I picked this one to try.
