Lori- we must have the same tastebuds...and we are both Hoosiers! Thanks for trying some of my recipes. Just wanted to let anyone who considers this recipe for your sweet potatoes know that, even though it is a side, it is SUPPOSED to be sweet! Often, people put marshmallows on top and that makes it even sweeter. I've always made my version of this dish for the holidays using brown sugar, some marshmallows and pecans, but this year I used fresh sweet potatoes/yams and topped it with toasted coconut and it was a huge hit. You won't believe how great it is with the fresh yams. Love your recipes!

This is a very good recipe for what I know as sweet potato pie. It is sweet, but it should be! My DH (who doesn't have a sweet tooth) would only eat pieces with extra topping on them! Next time I might decrease the sugar a very little bit (or drain the potatoes better!) and I will definitely add pecans to the topping! This makes a nice change to chipotle mashed! Thanks!

I really thought that we'd like this, but it was much, much too sweet (I really didn't think that 1 1/2 cups sugar with the amount of potatoes would be that sweet - maybe the coconut/brown sugar topping put it ove the top?). Perhaps we should've thought of this as dessert, but as a side, it was, unfortunately, much too sweet for us. And even as a dessert, it would definitely be too sweet for me (my wife, on the other hand, might be all over it). I'm sorry it didn't work out for us.
