An easy and excellent banana muffin recipe. I can't keep these in the house. I found this in my "Muffin Mania" recipe book. I changed the recipe to include whole wheat flour because I'm a health nut. The original recipe says to bake at 375F but I bake at 325F because my oven is so hot. Adjust if you have to according to your own oven.


  1. Melt butter and set aside to cool down slightly.
  2. Mash bananas. Add sugar and slightly beaten egg.
  3. Add the melted butter.
  4. Mix the dry ingredients separately and add to the liquid ingredients.
  5. Do not overmix.
  6. Fill muffin cups.
  7. Bake at 375F - 20 minutes.
