  1. Soak beans 8 hours.
  2. Drain. Rinse.
  3. Place in a pot.
  4. Cover with water. Bring to a boil. Reduce. Simmer 1 hour.
  5. Drain. Rinse. Let cool.
  6. Meanwhile, heat butter in a skillet.
  7. Add onion. Saute 3 minutes. Let cool.
  8. Toss beans with onions, spinach, tomatoes and cheese.
  9. Puree the rest. Toss with beans.
  10. Serve immediately.
