This dessert is delicious and easy to make. I used skim milk instead of soy and almonds instead of pecans. Would like to add whipped cream next time!

  1. Using a whisk, combine pumpkin, vanilla, spice, and 1 cup soy milk in a large bowl. Add pudding mix and remaining 1 cup of milk, and whisk for 2 minutes. Immediately pour into serving dishes, garnish with pecans, and chill for 5 minutes or until set.
