  • Using a whisk, combine pumpkin, vanilla, spice, and 1 cup soy milk in a large bowl. Add pudding mix and remaining 1 cup of milk, and whisk for 2 minutes. Immediately pour into serving dishes, garnish with pecans, and chill for 5 minutes or until set.

  1. This dessert is delicious and easy to make. I used skim milk instead of soy and almonds instead of pecans. Would like to add whipped cream next time!
     
  2. Tastes just like Pumpkin Pie without the crust! Very easy to make, but when I first tried the Pudding, after a couple hours of chilling, it was a little gritty from the pudding mix. Just tried it again, after about 10 hours, and it seems to be better blended. I'll try this again, next time with Skim Milk. Mahalo for sharing!
