My Favorite Spinach Salad

ingredients
- 1 bunch fresh spinach
- 113.39-226.79 g shredded sharp cheddar cheese
- 236.59 ml crouton
- 5-6 slice bacon, crumbled

Dressing
- 118.29 ml wine vinegar
- 177.44 ml sugar or 177.44 ml Splenda sugar substitute
- 14.79 ml grated onion
- 4.92 ml paprika
- 4.92 ml salt
- 236.59 ml good quality olive oil (no substitutes)
directions
- Mix first 4 ingredients together in a large bowl.
- To prepare dressing, warm wine vinegar slightly.
- Add sugar and stir to dissolve.
- (If you prefer a tangier dressing, reduce the sugar to 2/3 cup.) If you don't warm the vinegar, you will have trouble getting the sugar to dissolve.
- Allow to cool.
- Add onion, paprika and salt.
- Stir well.
- Add olive oil and blend.
- I prefer to put it in a bottle and shake it.
- Pour over salad and enjoy!

This was a wonderful way to enjoy spinach salad! My husband gave it a compliment and he's not a spinach lover. I made some quick croutons (using nine grain bread) in the toaster oven. I am not a big cheese lover in salads, so I was surprised how much I liked it in this one! I can see why this is your favorite way to eat spinach salad. It's now one of ours! Roxygirl

Great salad. The dressing is wonderful, and what really makes this salad. I think you could add many more things to this, like a red onion, a hard boiled egg....it is good without though. I will for sure be making this again. I took this over to a friends home for a dinner that they had invited us to. They all liked it as well. I probly could have eaten the whole thing myself if I could have! LOL Thanks a trillion times over!
