My Favorite Relish

My wife made this delicious treat for me. She said she made it as a relish to add to my baked potatoes...but I tell you friends and tasted so WONDERFUL... that I ate it by itself. You can use it as a relish for other things, but I prefer to eat it just as it is.

I loved this.Tell you what I did second time I made it.I added 2 cups of blackeyed peas and made*yucky looking pea stuff* as my daughter called it.I left in refrig over night and it was great. My daughter loved it by the way.

  1. Chop or dice the pepper, onion and tomato coarsely with your Handy Chopper Plus.
  2. Add these ingredients together with the pimentos, pickle juice, and sugar.
  3. You may add or delete the amounts according to your own taste.
