My wife made this delicious treat for me. She said she made it as a relish to add to my baked potatoes...but I tell you friends and neighbors.....it tasted so WONDERFUL... that I ate it by itself. You can use it as a relish for other things, but I prefer to eat it just as it is.
- 1⁄2 bell pepper
- 1⁄2 onion
- 1 small tomatoes
- 1 jar chopped pimiento
- 2 tablespoons sweet pickle juice
- 1 teaspoon sugar
- Chop or dice the pepper, onion and tomato coarsely with your Handy Chopper Plus.
- Add these ingredients together with the pimentos, pickle juice, and sugar.
- You may add or delete the amounts according to your own taste.
I loved this.Tell you what I did second time I made it.I added 2 cups of blackeyed peas and made*yucky looking pea stuff* as my daughter called it.I left in refrig over night and it was great. My daughter loved it by the way.
