  • 118.29 ml butter
  • 177.44 ml chopped onion
  • 1 large cauliflower, cut into smaller pieces
  • 44.37 ml flour
  • 709.77 ml chicken broth (or 1 large can)
  • 236.59 ml whipping cream (small container)
  • 236.59 ml milk, fill container of whipping cream
  • 236.59 ml swiss cheese, grated
  • 1.23 ml salt and pepper

  • Melt butter in dutch oven. Cook onion and cauliflower. Note: The cauliflower does not have to be completely soft.
  • Sprinkle flour over vegetables and cook until slightly brown.
  • Add chicken broth and heat to a boil.
  • Reduce heat and simmer until vegetables are very tender.
  • Cool slightly, and mash vegetables.
  • Heat to a boil.
  • Reduce heat and slowly add cream and milk.
  • Heat to a boil.
  • Reduce heat and add cheese.
  • Cook over very low heat until cheese melts and add salt and pepper.
