- 118.29 ml butter
- 177.44 ml chopped onion
- 1 large cauliflower, cut into smaller pieces
- 44.37 ml flour
- 709.77 ml chicken broth (or 1 large can)
- 236.59 ml whipping cream (small container)
- 236.59 ml milk, fill container of whipping cream
- 236.59 ml swiss cheese, grated
- 1.23 ml salt and pepper
directions
- Melt butter in dutch oven. Cook onion and cauliflower. Note: The cauliflower does not have to be completely soft.
- Sprinkle flour over vegetables and cook until slightly brown.
- Add chicken broth and heat to a boil.
- Reduce heat and simmer until vegetables are very tender.
- Cool slightly, and mash vegetables.
- Heat to a boil.
- Reduce heat and slowly add cream and milk.
- Heat to a boil.
- Reduce heat and add cheese.
- Cook over very low heat until cheese melts and add salt and pepper.
