    Ingredients:

    Servings:

    Units: US | Metric

    • 1/2 cup butter
    • 3/4 cup chopped onion
    • 1 large cauliflower, cut into smaller pieces
    • 3 tablespoons flour
    • 3 cups chicken broth (or 1 large can)
    • 1 cup whipping cream (small container)
    • 1 cup milk, fill container of whipping cream
    • 1 cup swiss cheese, grated
    • 1/4 teaspoon salt and pepper

    Directions:

      Melt butter in dutch oven. Cook onion and cauliflower. Note: The cauliflower does not have to be completely soft.

      Sprinkle flour over vegetables and cook until slightly brown.

      Add chicken broth and heat to a boil.
    4. 4
      Reduce heat and simmer until vegetables are very tender.

      Cool slightly, and mash vegetables.

      Heat to a boil.

      Reduce heat and slowly add cream and milk.

      Heat to a boil.

      Reduce heat and add cheese.

      Cook over very low heat until cheese melts and add salt and pepper.
