Make and share this My Egg Salad recipe from Food.com.
- 4 hard-boiled eggs
- 1 tablespoon vidalia onion, finely minced
- 1 tablespoon sweet pickle relish
- 1 tablespoon mayonnaise
- 1 teaspoon yellow mustard
- salt & pepper
- Chop eggs, place in bowl.
- Add all other ingredients, and mix well.
- Serve on desired bread.
- Great on rye.
YUM! This was exactly what I was looking for - simple and delicious! I cut the eggs down to 3 and made 2 sandwiches with it on toasted white bread with a leaf of lettuce. Thanks for sharing this super-easy, yummy recipe.
A good egg salad and DH says it is a keeper. Add this to basic potato salad to turn it into something special! I am going to make a version of this with a hot pepper relish to go on crackers. Thanks for posting.
Perfect blend - the only thing I would add would be a little chopped celery - but it's great as is!
