    Ingredients:

    Units: US | Metric

    Directions:

      Preheat oven to 350.

      Mix dry ingredients.
    3. 3
      Add currants, coconut and nuts. Mix.
    4. 4
      Mix oil and carrots and add to dry. Mix.
    5. 5
      Put in loaf pan (or any shape you want). Let it stand for 20 minutes.

      Bake 1 hour.

      Cool and remove from pan.
    8. 8
      Keeps for 2 weeks.
