My Best Ever Meatloaf

"I have only made a few meatloafs over the years. This one just came out the "Best Ever". It is extremely easy and you probably have what you need right in your own kitchen. Enjoy!"

  • Thouroughly combine all ingredients EXCEPT bacon.
  • Place meatloaf mixture into a bread/meatloaf pan.
  • Cover top of meatloaf with bacon slices from side to side covering the entire meatloaf.
  • Bake meatloaf in oven at 350* for 1 1/2 hours.

  2. This was yummy! Even my husband who "doesn't like meatloaf" really enjoyed it and asked if I'd make it again sometime. I added some small cubes of cheddar cheese to the meat mixture and it came out great. The bacon was nice and crispy and the meatloaf was moist. Meatloaf doesn't get any easier than this! I'm adding this recipe to my collection.
     
  3. My Husband and I enjoyed this recipe. It was a snap to put together and just the right amount for the two of us and we still have half left for meatloaf sandwiches. I left out the green bell pepper because I didn't have one. I will be making this recipe again and again. Thank you for the recipe !!
     
  4. This was just not what I expected. I wanted more seasoning and the meatloaf was very dense. The bacon made it too greasy for our tastes (perhaps I should have par-cooked it before putting it on the meat.) We did enjoy it more the next night when I made a mushroom gravy to top it with. Donna
     
  5. Now that's a good meatloaf!!! The bacon gives this an awesome flavor. Don't change a THING - this is perfect as is! (Although next time I make it I'm gonna roll some mozzarella inside and see how I like it)

Tweaks

  1. I've made this twice now. It's super easy. I did substitute a half of chopped onion for the green pepper and honey barbecue sauce for the ketchup. I also spread some of the barbecue sauce on top.
     
  2. My husband has always hated my meatloaf. I had a craving and desided to try again! SO Glad I found this recipe! Excellent taste and texture! Instead of ketchup I used tomato sauce and added a little more bacon. My DH ate 4 peices and said he could eat this meatloaf again and again! Thanks so much! :) This will be enjoyed over and over and also going in my cookbook to pass down to the kids! THANKS :)
     
  3. I've been making my meatloaf similar to this for years. Only difference is I use a can of Italian stewed tomatoes instead of the ketchup in the meat mixture. I use ketchup on top of the meatloaf before I place the bacon on. It is very taste.

Hi ZAAR fans. I became a fan myself through my mom (Braunda (Brau)) some time ago. I recently got my own computer and couldn't wait to become a member. I'm a stay home mom to 2 beautiful children as well as a full-time wife. I don't do much for fun but have plenty of ideas dreaming. I enjoy trying new recipes, especially when it's within my budget. I can't stand people who smack thier food when they chew. Something I inherited from my dad. Although, I hear that's a compliment in some circumstances as well as other countries.
