Mustard Sauce

"A mustard sauce recipe from a very old New Zealand 'Edmonds' cookbook. This is the original recipe from the book. I have been making this for many years. Use either the liquid in which the corned beef has been cooked or use water.  In NZ we use malt vinegar in this recipe. Adjust quantity of ingredients to suit your own taste. It is more of a sweet/sour mustard sauce. Also good cold on corned beef sandwiches. "

  • Beat egg and sugar together.
  • Add flour, mustard, pepper and salt.
  • Stir in liquids gradually.
  • Cook in saucepan over medium heat until mixture thickens.
  • Serve over hot sliced corned beef or hot ham.

  1. Jen we really love this. I served with Kiwidutch Andria's Best Corned Beef/ Silverside on the Planet. Recipe #151187 and used the stock from the corn beef. Because the stock was quite strong in flavour I did increase the mustard powder to 2 teaspoons. Very yummy and a definite keeper for us! Thanks for posting :)

  3. NZ Recipe with all the same ingredients calls for 2 TBSP of Sugar, not 1/4 of a cup. This recipe is for those seeking diabetes.
     
  4. This is a New Zealand classic and it is fun to tweak it your own way but please note that the original recipe is always made with "MALT" vinegar here in NZ.
     
  5. Great base for sauce, I added one tablespoon whole grain mustard and cut the sugar back a little. I also added a teaspoon of prepared horseradish. Really easy sauce thanks! Oh yea I used applecider vinegar.
