We should all have a good potato salad recipe at hand! Great for BBQs and goes well with my Mean Beans (Pork and Beans).

  1. Boil potatoes with skin on until tender. When cooled to the touch, skin potatoes and discard skin. Large dice potatoes and place in large bowl.
  2. Add to potatoes the minced celery, sliced green onions, minced sweet pickles and sliced olives.
  3. Peel eggs, setting aside the yolk; chop the white portion; add to bowl.
  4. Season mixture with salt and pepper and toss all lightly.
  5. In another small bowl add the cooked egg yolks, mayonnaise, vinegar and mustard; mix thoroughly breaking up yolks.
  6. Pour mayonnaise mixture over potato mixture and toss to coat.
  7. Place in pretty bowl and sprinkling lightly with paprika.

This was ok, but I didn't like the taste of the sweet pickles mixed in with the olives. I don't think it had enough onion in it either. If I were to make it again I would add more. The green onions just didn't give it enough flavor.

What a great potato salad. I really enjoyed the addition of the the pickles and green olives. It was great with our brats for Memorial Day. Made for ZWT6.

I loved this potato salad. Never had potato salad with green olives in it before. Nice change. I served this with BBQ hamburgers and it was a big hit at our house. Thanks for the great recipe.
