This is the Mustard Dill Sauce for Gravlax (Swedish Sugar and Salt Cured Salmon).

- 3 tablespoons Dijon mustard
- 1 tablespoon sugar
- 1 tablespoon vinegar
- white pepper
- 1⁄2 cup vegetable oil
- 1⁄2 cup chopped fresh dill
- Mix the mustard, vinegar, sugar, salt and pepper.
- Add the oil slowly while whisking, to form an emulsion.
- Add the chopped dill.
What a great find for the gravlax fans my BF and I are! The perfect complement to what I find is the best way to "cook" salmon. I omitted the salt, however : gravlax is salty enough in itself!
