Mustard-Crusted Roast New Potatoes With Shallots and Garlic

"A flavour packed roast potato recipe which results in crisp and crunchy little new potatoes with caramelised shallots in a wholegrain mustard crust. Wonderful for dinner parties as well as BBQ's. These are SO easy to prepare, no peeling required and they can be prepared ahead of time; just let them sit in the mustard and oil marinade until they need to be roasted.."

  • Pre-heat the oven to 200C/400F/Gas 6.
  • Par-boil the potatoes for 3 to 5 minutes and then drain well.
  • Place the potatoes into a large bowl with the oil, mustard, salt, pepper, shallots and garlic and mix well.
  • Toss the potatoes well so they are all evenly coated with the seasonings, oil and mustard.
  • Transfer them to a roasting tray and roast them in the pre-heated oven for 35 to 45 minutes or until the mustard forms a golden crust and the potatoes are crisp and cooked.
  • Gently toss them in the tin before serving hot with chicken, sausages, roasts, stews or with burgers and pies.

  1. Some of the crispiest potatoes I've ever had. I loved the mustard and the shallots were charred and slightly sweet. A perfect side dish!
     
  2. I needed a quick and easy dish for new potatoes and to go with some burgers. I used olive oil, dijon, garlic, pink sea salt and pepper. I did not par boil them, small and garden fresh, cooked in the time given. They were delicious. this is going to appear alot on our table in new potatoe season! Thanks for sharing.
     
  3. Loved this! I didn't have coarse ground mustard, but used a spicy brown mustard. I was also low on garlic and only used 2 cloves and a sprinkle of powder. I have added the coarse ground (and of course garlic!) to my shopping list and will make this again - although it was quite yummy the way it was. I roasted this the full 45 minutes, and lost a few pieces of the shallots that burned a bit. Might try and find some smaller shallots next time and only cut them in half - or maybe some pearl onions? This is definitely a keeper recipe!!
     
  4. These potatoes are simply delicious! I followed the recipe the first time I made them and served as a side to roast salmon. The second time I made them, I added some smoked paprika and cayenne and served as part of a tapas meal. Again, they were perfect! Thanks for this recipe which seems to be very versatile.
     
  5. Only thing I didn't like was that the potatoes came out of the oven looking rather dry, so I simply sprayed them with a little spray oil from a bottle. Very much loved. Thank you!

  1. Very good. Had to use purple onion in place of shallot and Dijon in place of the grainy mustard because neither of which I can find here. Thank you for the recipe!
     
  2. Okay, instead of the coarse grain mustard I used my favorite brown mustard, Koskiusko. For some reason potatoes and mustard just go together really well. The garlic and shallots made this sublime. Plus it was so easy to make. My only other change was to use less oil. Thanks for a great side dish! Next time I'll try it will a coarse grain mustard :) Thanks FT!
