Mushrooms on Toast

"This recipe was given as a "easy comfort food." I had actually never tasted this before; but I do love mushrooms, so I thought I'd try it. And am I glad I did! This has to be one of the best new dishes I've tried in awhile. Whether for lunch or snack, if you like mushrooms, you'll love this dish!"

  • Gently cook the shallots in the olive oil 2 minutes; add the garlic and cook a minute more.
  • Add the mushrooms and toss them to coat. Add the wine, thyme and salt and cook until mushrooms are cooked through.
  • Toast the bread on both sides; spread with butter. Season the mushrooms with pepper and more salt if needed. Pile them on the toast thickly. Top with fresh thyme if using.
  • NOTE: You can add a spoonful of mascarpone cheese to the toast with the butter if you're feeling indulgent.
