This is a medieval recipe originated by Menagier de Paris. This translation is based upon one by Janet Hinson. She calls for parmesean cheese but cheddar works well too. If you don't have grains of paradise you may substitute some fresh ground black pepper.

Ingredients Nutrition

Directions

  1. Preheat oven to 350 degrees.
  2. Grind grains of paradise.
  3. Mix cinnamon, cloves, ginger, sugar and ground grains of paradise.
  4. Mix mushrooms, 2/3 of cheese, spices and oil.
  5. Put mixture into crust, put remaining cheese over.
  6. Bake about 20-25 minutes.

Easy to make, unusual taste. The first bite I was like: "I don't know about this..." but trust me, give it a few more bites to grow on you - you'll be glad you did. It was very good! I didn't know what "Grains of paradise were" so I took the advice listed in the description and used black pepper. The cheese I used parmeseano reggiano. Thank you for sharing this MysteryGirl
