Mushrooms in Cream

"This is from a Vincent Price cookbook: "A Treasury of Great Recipes". Use button mushrooms, or a mix of various fresh mushrooms, i.e. chanterelles, shiitakes, porcinis, etc. Makes a nice side dish."

  • Slice mushrooms.
  • In a skillet, melt 3 tablespoons butter. When butter is foaming, add sliced mushrooms; stir them well for 1 minute to coat thoroughly with butter.
  • Sprinkle with salt and pepper.
  • Add cream and simmer gently for 5 minutes, stirring occasionally.
  • To make garnish, cut each slice of bread into 4 triangles.
  • Melt butter in a skillet and saute triangles on each side, until slightly browned.
  • Serve mushrooms in shallow, single-serving casserole dish and stand toast triangles around the edges, with points up.

  2. These were nice and simple. We actually paired them to a peppery steak and garlic rice, and it was a great combo. But I could happily eat these with toasted points! Thanks for sharing!

  4. Breathtaking! I have this cookbook on my shelf, and I've never made this recipe...shame on me! Fabulous! Made exactly as posted, except I halved the recipe....wanted to add garlic, but restrained to stay true to the recipe! I used toasted french bread instead of regular bread. I'd give this more than 5 stars if I could! Thanks for sharing!
     
  5. So good!!!! This is absolutely terrific on a good steak. We really enjoyed it with Recipe #213659 and Recipe #34612. I made this as listed but I only had milk so I simmered it for about 15 minutes to thicken. Made for my adopted chef for Fall 2009 PAC. Thanks mikekey! :)
