Mushroom Veggie Burger

- 3 tablespoons olive oil
- 1 1⁄2 lbs mixed mushrooms, roughly chopped (combination of crimini, shiitake, and Portobello)
- 1⁄2 cup onion, finely chopped
- 6 minced garlic cloves
- 2⁄3 cup rolled oats
- 1⁄3 cup parmesan cheese, shredded
- 3⁄4 cup breadcrumbs
- 2 eggs, beaten
- 1 tablespoon fresh parsley, chopped or 1 tablespoon dried parsley flakes
- 1 teaspoon dried oregano
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon black pepper
directions
- Heat 1 tbsp oil in large saucepan. Saute the mushrooms, onions and garlic over medium heat for about 10 minutes, or until the liquid boils off, and the mushrooms begin to saute.
- In large bowl, add mushroom mixture to oats, Parmesan, breadcrumbs, eggs, parsley, oregano, salt and pepper. Mix well.
- Allow to sit for 15 minutes to develop the flavors.
- Shape into patties.
- Heat 2 tbsp oil in large non-stick skillet, over medium heat. Fry patties, cooking about 5 minutes on each side, or until golden brown.
- Serve with your favorite burger toppings.

I'm a food junky. I also work very hard to eat a healthy varied diet. Almost every weekend i'll spend several hours experimenting to make a delicious nutritious new handful of recipes. When i'm not cooking i'm looking for the next hiking/camping/ backpacking/kayaking trip to take. I swear I'm solar powered. I have a beautiful dog who accompanies me on nearly all trips. I also have a wonderful husband whome holds down the fort until my return.
My poor hubby does not have a healthy food palate. He provides me plenty of challenge trying to find healthier (but not obviously) savory foods.
