  1. In bowl, combine dried mushrooms and hot water. Stir well and let stand for 30 minutes. Drain liquid into crock pot. Set solids aside.
  2. Meanwhile sauté onions and celery in oil. Add garlic, thyme, salt and pepper, reserved mushrooms, and parsley. Cook, stirring, for 1 minute.
  3. Transfer to crock pot. Add water. Cover and cook on high for 6 hours.
  4. Strain and discard solids.
