    Halalmom's Note:

I found this recipe on a German baking site and finally I found the time to test it. The muffins turned out soft and moist, with a wonderful maple syrup aroma. I love them!

Very good recipe. The maple syrup flavour is mild and delicate. I used eating apples, but I think sharp cooking apples would be better; I also peeled them (the recipe doesn't mention this). Half-way through the recipe, I realised that someone had eaten most of the maple syrup and that I only had 60ml left in the house! So I divided all the wet and dry mixes into two, then added maple syrup to one half and slightly diluted floral honey to the other half. I used paper muffin cases instead of greasing the tin. Both sets of six muffins turned out very well - light and moist, and very more-ish. Reviewed for Pick A Chef, Spring 2007.
