Wheat & raisin muffins

  1. Combine flour, oatmeal, baking soda, salt, wheat germ, raisins and egg. Separate bowl: combine oil, milk and honey - add this to flour mixture. Blend, pour into muffin cups. Bake at 400 degrees for 25 minute.

Yum! These turned out to be much lighter than I was expecting. I used half extra light olive oil and half unsweetend applesauce instead of the safflower oil, which I don't have. Very tasty and a perfect treat for my sick little gerbil. This one is going into my regular muffin rotation.
