I made this recipe up and really liked it. You can add bacon if you don't want a meatless meal, lol.

  1. Melt butter.
  2. Add mushrooms, green onion, and pepper.
  3. Sweat down.
  4. Add beaten eggs.
  5. Add cheese on half side, saving a little for top.
  6. Add spinach.
  7. You can add bacon here on top of cheese and spinach.
  8. Flip over plate.
